Abstract:
The growing generation of organic waste from food-service activities currently represents one of the main environmental challenges in Ecuador’s tourist areas. In the Olón commune, the absence of sustainable practices and limited use of waste have generated negative impacts on the natural and social environment, highlighting the need for environmentally responsible approaches. The general objective of this research was to propose a circular bioeconomy model for the sustainable management of waste in restaurants in the Olón commune in 2025. A mixed, descriptive, non-experimental approach was applied, using semi-structured interviews with restaurant managers and surveys administered to the operational staff of four restaurants, comprising 39 employees. The results show a low level of knowledge about the circular bioeconomy, while at the same time revealing a high willingness to apply the model within the commune through training and institutional support. The main obstacles identified include initial investment costs and the lack of economic incentives. At the same time, an opportunity exists in the valorization of organic waste through composting and its reintegration into the local production chain. In conclusion, adoption of the proposed circular bioeconomy model could reduce environmental impacts in the commune, generate operational savings, and strengthen Olón’s sustainable tourism identity. The study recommends implementing a training schedule, local incentives, and further analysis of the conditions required to ensure effective and sustainable application of the proposed model.
